Text when I don't need formatting.

RTF when I need some formatting, but not the level of fancy word processing.

Word when I need fancier features. Not because of any inherent love of Word, but because I only tend to need fancier features when I'm sending it to someone else, and Word is, unfortunately, the international standard for word processing.

Boy do I wish RTF were more capable. Or OpenDocument more widespread. (Or PDF more editable as a 'word processing' format, rather than a 'publishing layout' format.)
