Take care to distinquish between the observed phenomenon and the theory which proposes to explain it.

Evolution of species is a "fact" that is observable in nature and reproduceable in the lab.

In his "Origin of Species", Darwin put forth a Theory of Natural Selection in an attempt to explain the general nature of evolution. This became the basis of our current understanding of the subject (and of biology in general).

By analogy, one could say that gravity is an observable fact, and Newton's Theory of Universal Gravitation (or Einstein's General Relativity, if you want to get fancy) is a theory which proposes to explain its nature.
