If you are cooking at a lower temp use olive oil. If you are cooking at a higher temp use Vegitable oil. :)

The smoke point of Olive oil is lower and olive oil has a better taste and is also better for you than Vegitable oil.

Vegitable oil, since it has a higher smoke point can be used in pretty high heat and not fill the room with smoke and/or flames.

Unrefined olive oil (smoke point is below 320)
Refined canola oil (smoke point is below 400 F)
Refined corn oil (smoke point is below 450 F)
Refined avocado oil has a smoke point of below 520 F, the highest temperature of all the plant oils.
