olive oil. a nice extra virgin, try a few out see what you like, they vary from OLIVE to plain old oil in flavour. (i keep my oil in a guinness extra stout bottle with a bar pour tap on it on teh counter, and refill ti form the big jug as needed, oil degrades rapidly in light, so the dark bottle is ideal) pam cookign spray. butter, regular and unsalted salt, kosher. white vinegar (get a gallon it's great for cleanign too) red wine vinegar galic. fresh.
