  short answer (from ex chef) by unjust 2006-11-20 13:06:10
saute pan ~10" alluminium or allclad or comperable NOT nostick
sauce pan ~1qt, ~3-4qt see above
paring knife ~3" henkel makes a nice one
chef's knife or santoku ~8" get one that fits you
plastic cutting board ~12x18 one of the white heavy ones
glass measuring cup 1c and 4c
dry measuring cups, metal.
measurign spoons, metal.
1 flat cookie sheet
1 lipped cookie sheet
bamboo "scraper" spatula
silicone spatula, small and big
plastic fork big
collander or mesh chinamans-hat
metal spatula
*good* pepper grinder (peugeot. don't bother with others, yes you want to pay that much for a pepper grinder, you'll only pay it once)
mortar and pestle (3-4" marble or 4-6" japanese suribachi style)
cast iron skillet ~10"
metal mixing bowls, nested set.
cheese grater, fine (for hard cheeses) and coarse (for soft)
9" round adn 8" square cake pan

from that you can cook just about anything with the investment of ~5$ in throwaway pans for roasters adn bread pans and the like.
spices, well it depends on what style you cook, but for *typical* european:
allspice, cloves, cumin, cinnamon, nutmeg, rosemary, thyme, marjoram, oregano, "poultry seasoning", and vanillia will cover you for a whole lot of things.
