Past four places I've lived at had electric stovetops - I've had no problems doing stir-fry with a flat-bottomed wok. With the gas stoves back in MA, I used flat-bottomed woks and the real thing; never had a problem one way or another.

The only thing I could do only on the gas stove was some homemade pita-bread relatives (chapati?) - they needed to sit right on the burner and needed the open flame to come out right.
