They dry out my hamburger and make it all biscut like. OR they dont cook all the way through. I use my griddle pan. just a big hunk of flat iron a quarter inch thick that sits right over the burners. Stole it off of a construction site I worked at. Scrubbed it down, boiled it, then bleached it clean and hit it with a grinder to get off the hard rust and make it shinney. Then I seasoned it nicely. Its fantastic covers 2 burners and I can make pancakes or burgers just like at the diner.
