What kitchen equipment and supplies are essential? by Phoon2006-11-20 01:18:14
  What I use: by PSYCHOI3OY 2006-11-20 02:18:08
I have far more than this, but since becoming a bachelor, these are the most used pots/pans/utensils in my kitchen:

Large skillet (~12" with high sides). Mine's stainless/aluminum core/non-stick, but I'd trade it in an instant for a large cast-iron skillet.

Small skillet (~8-9"), same as above.

Flat bottomed non-stick wok. I'd much rather have a round bottom carbon steel wok, but this is what was given to us in the wedding gift stuff and it does work on the 'lectric stove, for the most part.

2 quart saucepan (heating up pasta sauce, mac n cheese, ramen, etc.)

6 quart pot (for lotsa pasta).

Cookie sheet(to support the large tray o frozen lasagne). Pizza sheet (I cook the pizza straight on the rack but it cuts easier on the pizza sheet than the cookie sheet).

2 plastic spatulas (or other spatulas that're nonstick). One large slotted spoon, one large non-slotted. One ladle. A pair of tongs. A couple of the larger tupperware bowls for mixing/salads (the medium sized ones tend to be used for large serving bowls, or mixing/serving in one bowl to make less dirty dishes).

I have a nice carbon steel Chinese style cleaver, a cheap but usable 9" stainless chef's knife, and an assortment of other knives that get used at random. The cleaver and chef's knife get the most serious use, though. I grew up using a Chinese 'fruit knife' wich is carbon steel and square like the cleaver but only about an inch and a half high and about 12" long. Carbon steel is teh schniznangle when sharpening knives and keeping them sharp. Gotta keep them dry, which isn't hard in Colorado but may prove more difficult in Florida.

I have a lot more stuff than the above, most are parts of 2 sets that were wedding presents (and she let me keep), some random stuff from the in-law's old house, etc. but the above are the most commonly used things for single-serving bachelor food. (Well, bachelor food that doesn't include the word "microwave" in the directions. Or toaster oven.)

You might want to check DR66's diary for recommendations as he's reportedly as good a cook as he is gunsmith, which is saying something.
