what i use most:
8" and 12" frying pan
2, 3, 8 quart pots
what i need on certain occasions:
5 gallon tall pot (For frying turkeys)
20 and 30 gallon pots for crawfish and shrimp boils
15 quart dutch oven (cast iron pot with cover)
BIG cast iron frying pan

spices I have:
pepper mill with mixed pepper corns
cinnamon
allspice
Chinese five spice
Paprika
bay leaves
Italian herb mix
thyme
"curry" powder
onion and garlic powder
we have thyme, basil, rosemary ... fresh in the garden
got some "Indian spice mixes"
------
I can get more if needed ...

Utensils:
the usual collection of knifes, forks, spoons :-)
A good quality "chef knife"
paring knife
Knife sharpener "Steel"
cutting board
Vegetable peeler (get a good one)
colander
wooden spoon(s)
ladle
"pancake flipper"
thongs
pot holders
