If you want to make a sauce by itself, fry up an egg, or heat a can of gravy you need to use a small pan. Sautee vegetables? You need a six inch pan. Sautee garlic and shallots for a dish: small pan. You probably only need on of the larger pans, but the little ones you need more of.
