violin/viola/cello are all really good. as apart from not having frets, and thus building a really good 'ear' for music, they also come in really small sizes. I started learning violin @ 3.

Once they are closer to 8-10ish, wind and brass instruments are also good, as above, breathing, diaphragm control, but also help with the vocal side as well. A lot of my school friends, have gone on to be able to project their voice really well due to years of wind instrument training. (Again, I am biased, I play trombone).

Piano/keyboard, depending on your teachers, I found I tended to pick this up pretty easily through the other instruments I learnt. I had a few months teaching here, but decided trombone was way cooler.

I do admit freely that I could be a much better instrumentalist though if I practice more! By the time I was about 15 I was doing at least an hour on each instrument each day.
