Besides the obvious piano choice, there are a lot of instruments out there that are lots of fun to play. 'Cello is pretty cool and lends itself to a ton of different types of music. I would have loved to learn to play the harp, and violin too (though you'll suffer with this last one, playing it bad is a killer for the ears :p) The clarinet is funny! :)
If you can, try and get them to play of bit of piano, one of the stringed instruments, and one of the wind instruments. Piano develops good hand coordination and skill, gives strength to the hands and fingers, wind instruments help to learn how to control breathing, develop the lung area and help develop diaphragm control (good for controlling hiccups :D), stringed instruments (especially with bow) develop lightness and elegance of the hands and of the body (though they will give callous-tipped fingers... not much anyway :p)
