That's why they say "not guilty" instead of "innocent". Proving innocence is often impossible and also beyond what the law cares about. All the jury cares about is "proven guilty" or "not proven guilty".

At least, that's how it is in the USA. I understand that in some other countries you can actually be found innocent.
