So, ended up not making the chicken a couple of nights ago... too busy tearing up the deck*
Anyway, thanks for the suggestions, and... how does this recipe sound? (took off of the net)
Grilled Chicken Breasts with Lemon & Thyme

Serves 4
A bold mixture of red-pepper flakes, garlic, thyme, lemon juice, and olive oil serves as a spicy marinade for bone-in chicken breasts. If you want your chicken spicier still, increase the red pepper or leave the breasts in the marinade for an hour or two.
Ingredients:
4 Red Bird bone-in chicken breasts (about 2 1/4 pounds in all)
1 1/2 tablespoons lemon juice
1/4 teaspoon dried thyme
1/2 teaspoon dried red-pepper flakes
1 clove garlic, minced
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
Light the grill or heat the broiler. In a shallow dish, combine the lemon juice with the thyme, red-pepper flakes, garlic, oil, salt, and black pepper. Coat the chicken with the mixture.
Grill the chicken breasts over moderately high heat or broil them for 8 to 10 minutes. Turn and cook until the chicken is just done, about 10 minutes longer.
Suggested modifications? Note... I have bone-in breasts with skin... should I remove the skin for this recipe? When is says to grill them first, that's meat side down, then flip them just so that the ambient heat cooks them, right?
Note also... my grill has 3 burners... when the grill is up to heat, should I kill one burner and put the breasts over that one, or should I keep all burners on?

* So, went out to replace two trim pieces around the patio doors on the deck -- they were a bit rotten on the ends, so strata wants them replaced before repainting. Anyway, took off piece below door frame... face board (2x8) that covers the butt ends of the floor joists is rotting -- the bottom half is falling away. Removed deck (deck hangs off wall), removed header(?) (another 2x8)... the plate (two stacked 2x4s) on which the face board and the joists sit is rotted away also.
Two days, paid labour and parts, and a stack of new deck boards later... I'm ready to cook. :-) |
