which is one reason I want to do it myself. I love food and cooking, and I've made everything else I've ever had in a restaurant.

For maki I'll cut thin strips (and knife is for cutting the nori rolls cleanly) but I suspected that for ngiri it would be important. What's chirashi?

Most likely fish is whatever I can get on the market...
