if its only fish then it dosen't matter, as long as its not too chunky

if you have other veggies I would suggest as thin julienne as you can make, ense the need for absurdly sharp knife


my uncule ( educated by a japaneese sushi chef ) makes some very interesting kinds shuch as clams, lobster and scallops

one of the many reasons I look foward to vacation home every year :oP

as he once was told by said japanese chef

"one bite, two NO!"

eating sushi in more than one bite is just plain wrong, so don't make them to big
