Einstein didn't believe in a personal god, a god that interferes with the universe. (for more see here).

So in essence, for physicists, this is a way of saying: if there's a god you won't notice, because he can't change the laws of physics. And as there is no randomness in physics, he can't even interfere by casting the dice differently.
