you should be able to speak to someone and be understood, even if you did tend to say things in a more formal manner than a native speaker typically would... I don't like phrasebooks either - I want to know how the language works, not just memorise a bunch of set phrases and not know why you say one thing this way but another similar thing in a different way. The book I've got by Terttu Leney is fairly bad in that way - he doesn't go into much detail about the grammar at all.
