Ingredients
one half pound of bacon, thin-sliced if possible (remember, you're only cooking one side of it)
8-12 Medjool dates (one date per one slice of bacon)
4 ounces mild chevre goat cheese

Preparation
1. Cut dates in half (lengthwise or midwise, doesn't really matter) and pit them
2. Smoosh cheese into pit area of one half of date
3. Place half-date with cheese down on raw slice of bacon and roll it in the bacon, making sure to leave plenty of overlap
4. Place in a nonstick pan, bacon seam down, on medium heat.
5. Cook for about 2-3 minutes per side, gradually turning with tongs until all sides are cooked.
6. Place cooked wonders of joy onto paper towel to drain/cool for a couple of minutes.
