whether it be colour balancing, or photoshopping you are best off shooting in RAW (if your camera supports it) or TIFF (second best) as these to formats are 'pure' data. Jpg compresses each time you safe the file and since it is a lossy compression multiple saves can signifecently deteriate the quality of the image.

as for the three settings, while it may be labeled compression quality, it is possible that it is immage size. what are the pixel dimensions of each of the three files?
