the only problem I can see with your first choice is that Win2K will install on the second drive just fine. but, NTLDR (NT Loader) will still have to be on the primary boot device (C:\ in this case), so when that gets formatted the system will likely break if it lets you format the drive in the first place.

you may be able to fiddle about with the boot order and select the second disk (if you have more than one disk) as the one to boot, but I would probably just back up everything important on the present install and just reformat C:\ durring the new installation.
