What she originally wanted is irrelevent, the courts did not grant anything other than the alternating weeks and all Sundays. Perhaps a fair exchange of an additional two days/per month could have been granted to the father but was not.

It isn't about him. It is about the child. He isn't a hypocrite if he is there for the sake of someone else. He doesn't have to take part in any proceedings. He may even help the situation by speaking personally with the representative of the faith and ask for suggestions as to how he may best conduct himself.

If attending is such an intolerable violation, then fine don't attend. Be accepting not bitter. Work out an agreement of the additional two days in exchange or if the courts are not willing to grant this then shut the heck up. Leave it for another time. In the meantime, thoroughly enjoy the days on which custody has been granted and do not spurn the mother nor the religious teachings in the presence of the child.
