I was baptised Anglican, then raised effectively non-religious by a mother with deep interest in paganism and the occult and by a father with absolutely no religious concerns.

If I was the judge I would have asked the mother to provide proof that she has been attending church for the majority of Sundays since the child was born and whether the child attended with her. If so, then she could pick up the child from the father's home for Sunday morning church services and deliver the child back afterward. It's her responsibility to do so if she, as the mother, wishes to have the child instructed in the church.
