Fish fingers, as I know them in the UK, are regtangular pieces of white fish covered in breadcrumbs. Commonly cod is used, though in view of the disastrous state of Atlantic cod stocks I buy haddock fish fingers. Fish sticks are flaccid pieces of 'surimi' (a word for non-specific minced white fish), with added colour, flavouring and other wonderful aspects of the food scientists art.
