less pipelines is the main difference, less clockspeed also might be it. the 6800XT only has 8 of 16 enabled the vanilla 6800 ones only has 12 of 16 enabled the 6800GT has all 16 enabled. basically the XT is cheaper because they can use the chipsets where all the pipelines aren't exaclty working right, so they just disable the non-functional ones (and a few others to get it to spec) and whack it in a XT board. (Well, that's the simplified version I read somewhere)
