If you mean vegan rather than ovo-lacto-vegetarian, your comment stands as written.

But my lactose-intolerant friends confirm that butter is fine for them; the sugars go off into the water fraction and are not present at any significant level in the fat fraction, i.e. butter.

And another friend who had problems with milk protein was also fine with butter-- probably mostly the same reason, although he was also fine with anything that had been processed enough to denature the proteins, such as hard cheeses.

Mmmm, yams... *runs off to see if she can justify yams in addition to peasant food*
