vegetable broth for the beef consomme. Broth cubes work fine. Though I find that only the 'organic' ones do not have hydrogenated oils.
How about yams (the oranges ones) mashed with orange juice? Yummy-tangy, colourful and lotsa carotene to boot...
Are you cooking with butter? If veggieboy/gal has milk sensitivity, butter won't do. Personally, I love olive oil... Heck, even used it to make icing once. Made a lovely smooth and tasty icing, but it 'crept' at room temperature, even somewhat in the fridge... Live & learn.
