what we call "peasant food" or "the white stuff."
Required items are white potatoes, onions, parsnips, and winter squash of choice (usually acorn and/or butternut, but we've recently discovered that pumpkin works excellent well). The basic idea is that you peel and cube everything into 1 to 1 1/2 inch chunks, drizzle with olive oil, and bake at 350ish until they're done (c. 1 or 1 1/2 hour).
Variations include adding other veggies like yellow or orange bell peppers, tossing in some balsamic vinegar before baking and crumbled bleu cheese near the end of baking, or whatever else strikes your fancy. I usually add some rosemary. It's not a recipe, it's a colorway...
