High speed roasted-garlic potato soup : by toxin 2005-09-12 19:53:18
Chop and fry half an onion (soft, not brown)
Optional - Fry up a bit of bacon with the onion

Measure up enough chicken stock (use the pre-made boxes) to fill the number of bowls you want to make. Place in pot and heat up. Add fried onion (and bacon).

When hot, add some pepper (no salt should be needed).

Stir in a few heaping spoons of Roasted Garlic Instant Mashed Potato powder. Adjust to desired thickness.

Cook on low heat for 5 minutes.

Finish with some milk or light cream to enhance the smoothness and replace any cooked out liquid. Garnish with minced green onions and/or minced red bell peppers.

A basic 10 minute gourmet potato soup that does not look or taste like it is pre-fabricated.

Should impress the lady. It did mine.
[rest of tonight's welcome home menu was spinach salad, boiled baby potatos with onion/garlic Ranch dip and caribou carpaccio]
