Pluralistation or not is IMO just a matter of which you prefer. But once you have decided stick to it. It's rather annoying if there are plural and singular names.
One advantage of plural names is, that you are less likely to run into conflicts with reserved terms (i.e. a table called date might not work because of the DATE type, whereas a table dateS might do the job fine)
