There is always a need for engineers and you get lots of ammo.

Medic requires you to pay attention to the state of the rest of your team. When you are first learning it's best if you only have to worry about keeping yourself alive rather than worrying about everyone else too. Plus you get very little ammo.

Soldier can take a while to get used to the weapons but isn't to bad.
Field op. is far to easy to kill your own team or get in their way.
Cov ops generally requires you know the maps well and normally to be a good sniper.

Basically I'd recommend sticking to engineer until you get to know the maps and develop a feel for the teamwork and which classes are needed where on each map. Hold off on the other classes until you are no longer spending the whole time just trying to stay alive.
