I use the matzoh ball mix stuff you get in a canister. I make a basic chicken or vegetable broth, toss in some carrots, garlic, celery, green onion, and a bit of cilantro (crushed). I only make ~2 quarts at a time (beats me really, I don't measure anything when I cook) and maybe 10 balls because the stuff just doesn't keep worth a darn. I can't stand the stuff even a couple hours later.
