it's a bit like making chocolate mousse.

chop chocolate into tiny pieces (It's easier than trying to use a food processor on it, plus you can get crunchy bits of chocolate through the final product)

heat 300ml of cream to boiling point. Pour over the chocolate while still blending/stirring.

beat 4 egg-whites to soft-peak stage, then add 1/3 cup of castor sugar in small amounts while still beating.

add the egg-white mix to the cream/chocolate mix in two stages, blending/beating all the way.

put in a bowl/serving dish/whatever you like and refrigerate for a while.
