It certainly harms the cow when you kill it for food. It also harms plants when you cut them down and eat them, but if you don't eat, you starve yourself (and harm yourself). So, is eating "evil"?
I can't agree that harm==evil. I'm getting a sense that you are seeing things placed into one of a very few categories (i.e. "good" or "evil" - black or white) and are very absolutist about it. I see things as a continuum, where it's all shades of gray.
e.g. Surgery causes harm, but it is often necessary as it is the only tool we have now to prevent greater harm (in certain circumstances).
