I despise Unbuntu -- it's one of those "user-friendly" distros that thinks that the way to be "user-friendly" is to bury everything under graphical tools and make control of the configuration impossible for those who know what they're doing and infeasible for those who don't. (Belive it or not, pretty graphics do not make it any simpler to grok/manage /etc/fstab.) Mepis I haven't heard of. I run Gentoo, because it doesn't try to be helpful: it just does what it's told; it also has a base install that contains virtually nothing (not even X), so I can happily run a Gentoo system that has X yet neither KDE nor Gnome. The install guide is good, but installing it will require i) effort ii) learning (which is arguably good if that's your objective) iii) a weekend's worth of time (partly because it's compile-from-source, and partly because of i/ii).
