I had dual boot systems on all of my computers until now.
I created all partitions with fdisk, but let the formatting do
each system for its own partitions.
I recommend to use enough space for each main system and use the
rest for data. It is probably easier to split even the data partition in several smaller partitions, which makes the system more flexible, as you can delete or reformat each one with another filesystem if you like, while keeping the data on the others. The order of the partitions should be chosen remembering that it is possible to enlarge a partition if there is an empty partition next to it.
The order of installing does not really matter. With a linux bootdisk you can start the system on each partition at any time!
The last step of the installation is installing the bootloader (grub) from the linux system, which gives you direct access to all of your systems.
