...automatically interpret HTML content to render the HTML content like a webpage. While this has had the effect of making emails very pretty instead of just text, it also means that some email programs will allow the use of, just for example, html IMG tags for loading images to be rendered into your email as if it were a web page.
But this has the effect of contacting wherever the image lives in order to get the image. So whomever is hosting the image is contacted if you view the image. With some careful planning (well, not much, really), you can use this as an email tracking scheme. If the image is small or invisible, you won't even notice it's there.
However, the reason your email could be quite large is that there could be quite a bit of non-rendered HTML, perhaps even embedded Javascript, that occupies space in the email but isn't visible as text. That's another possibility. (Why would anybody do this legitimately? To create interactive emails or forms... basically email becomes nothing more than forcing a web page at someone).
You _can_ turn all or part of these features off in most email programs as far as I'm aware.
