Good manners means considering other people's feelings and their comfort to be more important in a social (or business, of course) setting than one's own personal wishes at the moment. The fact is, whether we like it or not, most people would find sopping up gravy with bread disturbing in such a setting. Therefore it's bad manners.
There is no etiquette rule that governs what you do in your own home behind closed doors and curtains. You can sop up gravy with bread or with shortcake or with whatever you want. Heck, you can lick it off your plate if you prefer. But when you're around others, you should think of their comfort before you think of your own.
