(or whatever day is good for you) works quite well, I think. Just be specific as to the date and the activity.
From the girl's point of view, vague questions like "would you like to go out sometime?" aren't easy to answer. If she says no, she might be afraid she'll hurt you; if she says yes, she might be worried you'll take charge of her social life. Anything else sounds like she's weaseling out.
Also, to some girls, vague questions sound desperate, while to others vague questions sound fake, like you're just trying to see if she's interested in you and not really interested yourself.
