Beet skins are great roughage	by watsondog	2005-05-11 22:35:46
but when you cook the beets, most of the vitamin content of the skins goes either into the cooking liquid or into the flesh. It's much, much, MUCH easier to peel them after they've been cooked and cooled. You don't even need a knife - the outer layer of skin slips right off usually.
