to have a complete list of what I do and how much time I spend doing it.

When someone asks me to to an additional task that puts me over the 40 hour a week work week, I ask them what project I should put on hold to do their project, or ask them to get the boss to authorize overtime pay.

You may still end up doing the additional task, but it does tend to help management see that you are already fully tasked and additional person hours are needed.
