2 chicken breasts, bonless, skinless - cut into pieces.
2 carrots - cut into pieces
3 stalks of celery - cut into pieces
a large portion of chopped mushrooms (roughly equal to the ammount of celery)

peanut sauce:
a big spoonfull of peanut butter (crunchy in this case) possibly 1/4 or 1/3 of a cup
a splash of canola or other cooking oil (not olive, it'd make it taste weird I think), about a tablespoon and a half
mix that thoroughly to thin out the peanutbutter
a clove of garlic finely chopped
a large splash of soy sauce
large splash of rice wine vinegar
half a teaspoon of some habanero hot sauce I have, but the recipies I saw online called for anything from cayenne powder to those crushed red pepper flakes that you put on pizza. adjust for your personal comfort level with heat (this happened to be "a little too spicy but still good and edible" for my wife and "what heat?" from me)
a couple shakes from the bottle of sesame oil
I'd have added ginger to it, too, but I don't have any.

I cooked the chicken to nearly done in some 'wok oil' which is basically oil with ginger and garlic in it, along with a couple cloves of garlic, a large splash of soy sauce when it was almost done, and a little rice wine vinegar.

When the chicken is just done (not pink in the middle but not really browned on the outside) throw the veggies in, they won't take long to cook. I think I added another couple cloves of garlic at this point. When they're almost done (warm all the way through but still crunchy) throw the sauce on. It won't look like enough but mix it all up quickly (very fast, it'll burn and stick pretty quick) and it'll thin out and coat everything nicely. Serve in bowls or on plates (rice might be a good idea, but the wife and I are on Atkins so we skipped it) and garnish with -- you guessed it -- peanuts.

This served two quite nicely.

If that's not readable or followable I can try to rewrite it.
