I use the following to mirror a source directory on a remote system to a local one:
robocopy \\server\share <local drive\folder> /XF skipfile.sys /E /mir /r:12 /w:300 /xo /z /log:<log dir>\logname.log

The /XF switch skips the files you specify
The /E switch copies subdirectories, including empty ones
The /mir switch mirrors the remote, so if a file is deleted there, it gets removed from your destination folder
The /r: switch specifies 12 retries, (otherwise it tries one million times)
The /w: switch specifies seconds to wait between retries
The /xo switch skips files on the source that are older than the destination

And you can always run robocopy /??? for a pretty good list of options.
