Electronic controls with piezo or glowbar igniters initially flow a small amount of gas out of burner orifices near the igniter, only; and open the main valve only after a thermocouple indicates this initial flow has been ignited.

The same technique is also used with pilot burner models, as well, and even without fancy electronics (in which case relays and solenoids [possibly combined into a single device] do the trick).
