Sort of like a crepe bar..make a bunch of crepes ahead, heat, let people fill them, sort of like a taco bar. Lots of options for food and dessert. Quick to make more if you need to (2 min to cook) and the fillings you can always use for your meals for the rest of the week (steak, ham, asparagus, tomato, eggs, cheese, anything really).
