I know what you're on about, because I *have* cycled a fair bit, but breaking your stride is about a hundred times less of an inconvenience than breaking your legs.

Moving off from a standstill is hardly the terrible ordeal you make it out to be, unless this happens to be uphill, in the rain, with a rucksack full of bricks.
