Broiling pasta with cheese are very good, cotija works nicely (a mexican feta), as does a nice colby. Need to add some garlic powder and pepper though. However, for a stove-top, I do tend to make a sauce starting with a roux, though. Allows the cheese the melt in better, in my opinion, without the oil seperating. Just my tendency. LthrOttr
