Well, I use one of the canola based sprays, myself. 3 eggs, 1 jalapeno and cheese soft taco shell, and a last minute modification: added some grated mozza cheese to the pan just after I put the eggs in. I forgot to break the yokes tho, so they were still soft when I rolled the taco. I just finished and washed my hands :)
