but la mian (the Chinese equivalent) is sometimes served dry. It is also sometimes known as Mee Hoon or Bee Hoon, depending on dialect. Udon here refers to the large noodles (since it's the Japs that use the fat ones). We don't make them as large here.

If I'm not wrong, Lo Mein is probably Cantonese dialect. La Mian would be the Mandarin (main language) form, or possibly a Hokkien variation. It's also possible that the Peranakan or Nonya cultures here (both are Chinese/Malay mixes) affected the names.
