Appletalk is not needed to connect OSX boxen to one-another. It is much simpler (and a lot less stressfull on the network) just to use the TCP networking for communications.

As for making sure the other macs can see the server, all you should need to do is select "Go" > "Connect to Server" and enter the name of your server in the Address bar.

The only issue is that I havn't figured out of OSX has the consept similar to Windows of a "Master Browser" to maintain machine listings. As a result, with AppleTalk off (and as a result not broadcasting "HERE I AM" constantly) the machine listings are missing.

Oh, and OSX does have ping, and I'm glad your enjoying your new job ;)
